If you are mixing by hand:

Flour temperature + Room temperature + water temperature= 80℃

Note that the number you get is simply a reference number. There should never be an exact temperature set for the mixing water.

In the winter or summer, there might be a slight difference. It should be set a little higher than the number you get in winter, and for summer vice versa.
