Ideal Humidity and Water Temperature Makes the Yeast Happy!

How do you calculate the water temperature for mixing?

If you are mixing by hand:

Flour temperature + Room temperature + water temperature= 80℃

Note that the number you get is simply a reference number. There should never be an exact temperature set for the mixing water.

The highest maximum temperature of water is 40℃, as yeast will be less active over 40℃.

In the winter or summer, there might be a slight difference. It should be set a little higher than the number you get in winter, and for summer vice versa.
