Hello, all. Welcome to Congalli.

Let's learn and enjoy making bread!

Bread Making with Congalli is a little book for the beginners of bread making as well as anyone who loves bread.

If you are an absolute beginner, I highly recommend you begin by making pizza or focaccia dough with our bread recipe.

Take your time and follow the direction carefully. You can top the dough with whatever you like (such as olives, herbs, dried tomatoes, cheese etc.), and make your very own home baked pizza and focaccia.

What will you need for bread making? Well, you may need only a good scale, an oven, and your clean work surface. However, there are equipments that may help you make a better loaf. Check the Kitchen Equipment page before buying any kneading machine or other tools. It will give you a brief idea of what you really need.

The simplest bread is made of wheat flour, water, salt, and yeast. But if you like to know more about the ingredients that can be used for your bread, please take a look at the Ingredients of Bread page. The preservation tips may also help you.

If you are interested in joining our Bread Making Workshop held in Congalli's kitchen in Chigasaki, Shonan, please see About Us page for more information (sorry, some parts are only available in Japanese).
